Cilantro Avocado Pesto
As we strive to find healthy recipes we don't have to think that healthy and delicious have nothing in common. Usually the idea of eating healthy is associated with eating greens with no taste or flavor.
The Cilantro Avocado Pesto is that spalsh of color and taste that will completely make you change your mind about a healthy recipe. You can use it for a wide range of dishes from pasta (whole grain for a healthier choice or, if you are gluten intolerant use a gluten free pasta), to a sauce for fish, a dressing for your salads; instead of mayo on your sandwiches or wraps as well as a dip for the Moroccan Inspired Chicken recipe, for vegetables, and even for chips. This recipe is also packed of nutrients such as vitamins A and C.
1 ripe avocado
1 bunch of fresh cilantro
1/2 cup nonfat plain yogurt
2 tablespoons extra virgin olive oil
2 scallions, chopped
1-2 cloves garlic, quartered
juice of 1 lime
1/2 teaspoon salt
Place all the ingredients in a blender and blend until getting a smooth, creamy consistence.
You can also use 1-2 brazilian nuts to add Selenium to your diet. Use your imagintion and creativity to add, change or swich any of the ingredients.
