Since in the last month or so we all been eating huge meals and lots of desserts and sweets, I say let’s start our new year resolutions the right way, with a healthy recipe. As eating healthy is often associated with eating only green and tasteless foods, I want change that idea and share with you a Moroccan-inspired chicken recipe that will make you feel like you are in the colorful and vibrant medina in Fez. As one of the great cuisines of the world, Morocco’s cuisine, a blend of culinary traditions of Berber, Andalusian Spain, Arabia and France, is a delicious combination of mouthwatering flavours that makes it unique. Moroccan dishes, are known for their distinctive flavoring which come from spices including saffron, cumin, coriander, cinnamon, ginger, and ground red pepper.
1 -1/2 pound chicken tenderloins ( or boneless skinless chicken breasts thinly cut)
1/4 cup extra virgin olive oil
1 teaspoon salt
3 garlic cloves, minced
2 teaspoons paprika
1 teaspoon cumin
1/2 teaspoon coriander
1/4 teaspoon ginger
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1/8 teaspoon cayenne pepper (optional)
Mix all ingredients except chicken together in a small bowl. Place chicken tenders or thinly cut breasts inside 1 gallon zip-lock bag, add marinade (reserve 2 tablespoons of marinade for brushing) and massage marinade into the breasts until evenly coated. Place the bag in the refrigerator and marinate for 5-6 hours.
Place chicken breasts on preheated grill, brushing with the marinade you reserved and grill, covered, for 2-3 minutes per side. Do not overcook.
You can serve it over couscous, salad or with the Cilantro Avocado Pesto (recipe on our blog).
