Mamina's Mango - Cilantro Salsa

I am not an fan of just a plain boring salad as part of my healthy eating.

I am a firm believer that a colorful dish with different textures and a combination of flavors will make any healthy meal delicious and enoyable.

The Mango - Cilantro Salsa can be used with grilled chicken breast, with Moroccan Inspired Chicken, with Jamaican Jerk Salmon Steaks, just as salad dressing or as a dip with chips.

Is the perfect splash of color and explosion of taste.

Ingredients:

1 ripe mango, peeled, pitted and diced

2 Roma tomatoes, diced

1/4 cup finely chopped red onion

2 tablespoons chopped cilantro

3 tablespoons lime juice

3 tablespoons fresh orange juice

Salt and freshly ground pepper

Combine the mango, tomatoes, onion, cilantro, lime juice, and orange juice in a bowl and gently mix. Season to taste with salt and pepper
